Easy-peasy veggie risotto

Serves 2-4

What ingredients you’ll need:

1 tbsp organic olive oil

1 organic leek finely chopped

1 organic zucchini chopped into tiny pieces

1 cup organic long grain rice

1/3 cup organic peas

Organic fruit/vegetable puree such as Ella's 1 Carrots, apples + parsnips   

2-3 cups organic vegetable stock

Grated organic cheddar cheese to serve

 

What you'll need to do:

1. In a heavy saucepan, heat olive oil over medium high heat

2. Place leek and zucchini in the pan and fry until soft – approx 8 mins

3. Add the rice, peas, puree and stir until combined – another 2 mins

4. Add 1 cup vegetable broth, and cook until liquid is reduced, stirring frequently.

5. Continue to add vegetable broth to keep rice covered, stirring frequently. Add broth, stir, and cook for a total of about 25 minutes until rice is tender.

6. Serve sprinkled with cheddar cheese to taste

Cooking time: Approx 40 minutes
